Hello everyone, I'm from Mich. but have a place near Ocala, I tried storing dry goods but the humidity always results in mold. bugs are another issue. any tips. Thank you.

Do you use heavy mylar bags? Those with oxygen absorbers and desiccant packs should take care of any issues.

I only use the 7 mil. size mylar bags. anything smaller just doesn't really work as well. I found the seal a meal bags will leak over time. Don't use desiccant in food only the oxygen absorbers. Flour we keep in the 1/2 gal jars, after milling put it in and vacuumed with a seal-o meal have some that’s been in the basement for 10 years and it’s still good, that should solve the moisture problem, any dry goods such as sugar or oats as well

Herbs, fruits even potatoes. I haven't attempted freeze drying as yet. I purchase those food items.

I have never tried dehydrating potatoes. Do you need to soak the starch out of them first or do them with the starch in?
